The “Senatore Capelli” variety is the most famous of the ancient grains, rich in proteins, amino acids, vitamins and minerals, very digestible because it is low in gluten. Ground in a stone mill directly on the farm. The flour obtained is type 1 and 2 and is called durum wheat semolina. With the addition of water it turns into pasta, and is drawn and dried for long conservation. The paste obtained has a color tending to bronze, with a very porous consistency and a strong taste that brings back the flavors of the past.
